Veg Nuggets

Want some snacks for your binge-watching sessions? Follow this vegan, flour-free recipe and enjoy yummy nuggets while you watch your favorite show!

Ingredients Required

  • Potatoes – 2 (big size)
  • Bread slices – 2
  • Onion – 1/2
  • Green chillies – 1
  • Garlic cloves – 5
  • Cumin seed powder – 1/2 teaspoon
  • Coriander seed powder – 1 teaspoon
  • Red chilli powder – 1 teaspoon
  • Coriander leaves
  • Mint leaves
  • Salt
  • Oil

Steps

  • Finely chop half an onion, a green chilli, 5 garlic cloves, a handful of coriander leaves and some mint leaves. (Coriander to mint ratio – 2:1)
  • Boil 2 big sized potatoes and mash them. Shred 2 slices of bread (brown bread or snadwich bread or milk bread) and add it to the mashed potatoes.
  • Mix well to combine the bread with mashed potatoes. Add the chopped garlic, onion, green chilli, coriander and mint leaves.
  • Next, add half a teaspoon of cumin seed powder, 1 teaspoon of coriander seed powder, 1 teaspoon of red chilli powder, some salt and mix well. (You can add a tablespoon of water to get the right consistency needed to make nuggets).
  • Make nuggets and fry them in medium hot oil. Ensure that the oil is not very hot to get the right crispy texture on the outside and well cooked and soft texture inside.
  • Fry till the nuggets turn golden brown and drain the excess oil using a paper towel.
  • That’s it, yummy veg nuggets are ready to accompany you in your binge watching!
