Restaurant Style Schezwan Pasta

Hello guys! If you like the packed,instant pasta then you are totally gonna love my restaurant style,home-made Schezwan pasta. This is a fusion of three popular cuisines,Indian,Chinese and Italian! Though it sounds complex,the steps involved are pretty simple.

Ingredients Required:

  • Penne Pasta (A pasta variety)-1 cup
  • Tomatoes-1
  • Bell Peppers(Red ,Yellow or Green)-1
  • Onions-1
  • Schezwan Paste(Available in most of the supermarkets)-2 tablespoons
  • Tomato Ketchup-3 tablespoons
  • Mixed Herbs(optional)
  • Oil
  • Salt to taste
  • Mint and coriander leaves for garnish

Steps:

  • Pour two and a half cups of water in a boiling pan and put it on a medium flame. After the water starts to boil add some salt and 1 teaspoon oil. Now,put 1 cup of penne pasta in the boiling water and let it cook for 12-13 minutes.(Adding oil before you add pasta helps the pasta to cook thoroughly without getting sticky and mushy.)
  • Once the pasta is perfectly cooked,(it increases in size and turns into a brilliant white color from the dull yellow),drain all the hot water and put the pasta in cold water for about 30 seconds and then drain all the water.(Lowering the temperature of the pasta once it is cooked,helps it to stay perfect al dente.) Now,the pasta is ready to bathe in the delicious sauce.
  • Nicely chop the onions,bell peppers and tomatoes and keep aside.
  • Put a frying pan on a medium flame and add 1 and a half tablespoons of oil.Now add the chopped onions and saute till they turn transparent.Then add the bell peppers along with some salt and saute till soft.It takes about 4-5 minutes.Then add the chopped tomatoes and cook till the tomatoes become mushy.
  • Reduce the flame to the low setting and add the shcezwan paste.Then add the tomato ketchup along with 1/4 cup of water and stir well.(You can add the mixed herbs along with ketchup if you like.)
  • Now,add the previously cooked penne pasta and saute for about 3-4 minutes.
  • That’s it! Garnish with fresh coriander and mint leaves and serve hot!
